The Story
Salumeria Biellese has been making old world style salami and other cured confections out of their Hell's Kitchen shop since 1925. The Felino is reputedly the most ancient cured sausage. It's no surprise that the recipe hails from Emilia-Romagna—the land of Parmigiano and Prosciutto—quite possibly the center of gastronomic universe.
Usage Tips
For a historical pairing try Giorgio Cravero's three year Parmigiano Reggiano. The sweet creamy parm pairs nicely with the nutty earthiness of the lightly spiced coarsely ground pork.
