The Story Fourth generation cheesemaker Chris Roelli had modeled this unique and delicious cheese off of Stilton Blue. Each batch only makes about 34 wheels and each must be aged for 2 months, so after working on the recipe for over a year Roelli built an aging cellar after to make sure the cheese was cured perfectly. Usage Tips Pairs perfectly with dried fruits and savory crackers.
