The result is a lush, buttery mouthfeel and a depth of flavor that is unmatched by export quality parm. The Story Generations of Craveros have toiled to make Cravero Parmigiano what it is today. Cravero is aged for an unspecified amount of time but no less that two years. Giorgio releases his wheels for sale when (in his own words) "they are ready." How does Giorgio know when they are ready? The wheels 'speak to him' as they are largely aged until they emit the proper tone when struck with a small specialized hammer. The family has aged their cheese this way for over 100 years.
